Top-ranked Sabalenka defeated 19-year-old Victoria Mboko 6-1, 7-6(1) on Rod Laver Arena.
The Belarusian, a two-time Australian Open champion, dominated the first set but faced a second-set fightback from Mboko, who saved match points and broke Sabalenka twice to lead 6-5.
Sabalenka prevailed in the tiebreak, extending her streak to 20 consecutive Grand Slam tiebreak wins.
She will face 18-year-old American Iva Jovic in the quarterfinals.
Jovic reached her first Grand Slam quarterfinal after a 6-0, 6-1 victory over Yulia Putintseva at John Cain Arena.
The 29th seed, who has also defeated seventh seed Jasmine Paolini this tournament, has now won consecutive matches without dropping a set and is the youngest woman to reach the Australian Open quarters without a set loss since Venus Williams in 1998.
Third seed Gauff overcame 19th-seeded Karolina Muchova 6-1, 3-6, 6-3 on Margaret Court Arena.
After dropping the second set, the world number three recovered to secure her third consecutive Australian Open quarterfinal. She will face 12th-seeded Elina Svitolina in the next round.
12th seed Svitolina extended her winning streak while ending world number seven Mirra Andreeva's run, defeating the Russian 6-2, 6-4 to reach the Australian Open quarterfinals.
The Ukrainian, riding an eight-match streak after winning Auckland, recovered from an early first-set break to take the opener.
Andreeva led 2-0 in the second, but Svitolina saved three break points and broke twice to complete the comeback in straight sets.
